How Do You Like Them Pineapples? - Part 2
The Roasted Pineapple with Tamarind and Chilli sounded like an interesting dessert , and so it proved to be. The recipe also includes coconut icecream but time was against me and we opted for store- bought vanilla.
First step was to prepare the poaching liquid aka spiced syrup. Basically just bung sugar, water, cloves, cinnamon, vanilla, ginger, chilli and tamarind paste in a saucepan and bring to the boil them simmer 5 minutes to let the flavours infuse.
Then into the syrup goes the pineapple and roast in the oven for 50 minutes, basting frequently.
Well, it's supposed to caramelise but mine didn't.
Serve with a spoonful of syrup over, and garnish with Thai basil. It's certainly an interesting concept to put chilli and tamarind in a dessert.
